Spinach Balls With Mustard Sauce

Total Time: 40 mins Preparation Time: 25 mins Cook Time: 15 mins

Ingredients

  • 2 (10 ounce) packages frozen spinach, thawed, squeezed dry
  • 2 cups herb stuffing mix
  • 1 cup firmly packed parmesan cheese
  • 1/2 cup butter, melted
  • 4 small green onions, chopped
  • 3 eggs
  • 1 dash nutmeg
  • 1/4 cup mayonnaise
  • 3 tablespoons dijon mustard

Recipe

  • 1 combine all ingredients in a large bowl and mix well.
  • 2 shape into 1-inch balls, cover, refrigerate or freeze until ready to bake.
  • 3 preheat oven to 350.
  • 4 set balls on ungreased baking sheet and bake until golden brown, about 10 to 15 minutes.
  • 5 serve with mustard sauce.
  • 6 mustard sauce: mix together; adjust mustard to taste.
