Spinach Balls With Mustard Sauce

Ingredients
- 2 (10 ounce) packages frozen spinach, thawed, squeezed dry
- 2 cups herb stuffing mix
- 1 cup firmly packed parmesan cheese
- 1/2 cup butter, melted
- 4 small green onions, chopped
- 3 eggs
- 1 dash nutmeg
- 1/4 cup mayonnaise
- 3 tablespoons dijon mustard
Recipe
- 1 combine all ingredients in a large bowl and mix well.
- 2 shape into 1-inch balls, cover, refrigerate or freeze until ready to bake.
- 3 preheat oven to 350.
- 4 set balls on ungreased baking sheet and bake until golden brown, about 10 to 15 minutes.
- 5 serve with mustard sauce.
- 6 mustard sauce: mix together; adjust mustard to taste.
