Crustless Spinach Quiche

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 5 eggs, beaten
  • 1 cup swiss cheese, shredded
  • 1 cup cheddar cheese, shredded
  • 1 cup monterey jack cheese, shredded
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/2 cup table cream

Recipe

  • 1 preheat oven to 350 degrees f (175 degrees c). lightly grease a 9 inch pie pan.
  • 2 heat oil in a large skillet over medium-high heat.
  • 3 add onions and cook, stirring occasionally, until onions are soft.
  • 4 stir in spinach and continue cooking until excess moisture has evaporated.
  • 5 in a large bowl, combine eggs, table cream, cheese, salt and pepper.
  • 6 add spinach mixture and stir to blend.
  • 7 bake in preheated oven until eggs have set, about 30 minutes.
