Leftover Meatloaf Hash

Total Time: 40 mins
Preparation Time: 10 mins
Cook Time: 30 mins


Ingredients



  • 2 cups meatloaf, diced

  • 3 eggs

  • 2 cups potatoes, diced

  • black pepper

  • salt

  • 4 tablespoons butter

  • 5 tablespoons heavy cream


Recipe



  • 1 parboil the potatoes until mostly done.

  • 2 melt the butter in a skillet.

  • 3 mix everything but eggs, and creamin a skillet.

  • 4 fry 15-20 minutes.

  • 5 scramble eggs with a fork and pour over hash.

  • 6 cook 3-5 minutes.

  • 7 pour cream over top and serve.
