P-nutty Rice Pudding

Ingredients



  • Servings: 9

  • 1/4 cup butter

  • 2/3 cup crunchy peanut butter

  • 3 eggs

  • 1 teaspoon vanilla

  • 1 dash salt

  • 2/3 cup brown sugar

  • 2 cups milk

  • 1 1/2 cups cooked rice


Recipe



  • 1 preheat oven to 350 degrees.

  • 2 microwave butter and peanut butter for 1 1/2 minutes ~ cool slightly.

  • 3 beat eggs, vanilla, salt, and brown sugar until well blended.

  • 4 add melted butter, peanut butter, milk, and cooked rice ~ combine well.

  • 5 pour into 8 x 8 pyrex dish that was sprayed with cooking spray.

  • 6 bake at 350 degrees for 45 minutes until set on the outside and still soft in the middle.

  • 7 cool for about 20 minutes ~ serves 9.
