Swedish Hard Candy

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • 1 cup sugar
  • 1 cup dark corn syrup
  • 1/3 cup butter
  • 1 cup half-and-half
  • 1 cup chopped blanched almond

Recipe

  • 1 combine sugar, corn syrup, butter and half-half in 2 qt heavy saucepan.
  • 2 cook over low heat, stirring until sugar dissolves.
  • 3 (watch so it doesn't overflow).
  • 4 continue cooking, stirring occasionally, to the hard ball stage (250*).
  • 5 remove from heat; add chopped almonds.
  • 6 pour into small fluted paper dessert cups (about 1 1/2" diameter- and once paper removed.. will have a pretty edge) or drop from teaspoon onto waxed paper- to make patties.
