Low Calorie Lemon Berry Scone

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 cup splenda granular, sugar substitute
  • 1/2 cup light butter
  • 1/2 teaspoon lemon extract
  • 1/4 cup egg substitute
  • 1/2 cup 1% low-fat milk
  • 1 cup fresh strawberries (whole) or 1 cup blueberries (whole)

Recipe

  • 1 heat oven to 375°f.
  • 2 mix the 2 cups flour, 4 teaspoons baking powder, 1 teaspoon salt and, 1/4 cup splenda in a mixing bowl.
  • 3 add lemon substitute.
  • 4 add egg and milk and work it into the other ingredients gently yet at a speedy pace with hands.
  • 5 add berries and gently fold.
  • 6 pat or roll dough to desired shape (7-10 pieces).
  • 7 brush with milk and sprinkle with splenda if desired.
  • 8 bake 10-18 minutes or until lightly brown.
  • 9 do not over bake!
