Sweet Corn Cake

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • 1 cup butter, softened
  • 2/3 cup masa harina
  • 1/2 cup water
  • 2 1/2 cups canned corn, drained
  • 1/2 cup sugar
  • 1 cup self rising flour
  • 1/3 cup cornmeal
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Recipe

  • 1 preheat oven to 400°f
  • 2 combine and mix all ingredients except for the corn.
  • 3 once this is mixed completely, add in corn and mix again.
  • 4 pour into greased casserole dish or cake pan.
  • 5 bake until center is done (insert knife or toothpick, if it comes out clean then the middle is done) and top is golden and crispy.
