Last Minute Creamed Onions

Ingredients
- Servings: 8
- 2 tablespoons butter or 2 tablespoons margarine
- 2 tablespoons all-purpose flour
- 2 teaspoons dijon mustard
- 1/4 teaspoon salt, to taste
- 1/8 teaspoon cayenne pepper, to taste
- 1 1/2 cups milk
- 3 (14 ounce) jars whole baby onions, rinsed and drained
- 1 scallion, sliced,for garnish
Recipe
- 1 melt butter in a large saucepan.
- 2 stir in flour and cook over medium-low heat, stirring constantly, until smooth and frothy.
- 3 let bubble 2 minutes, sitrring often, to prevent browning.
- 4 add mustard, salt and cayenne pepper, sitrring well.
- 5 add milk, stirring, and bbring to a boil over medium heat.
- 6 cook 2-3 minutes, stirring often, until thickened slightly.
- 7 add onions and cook 1-2 minutes more, just to heat through, stirring.
- 8 serve with scallion sprinled on top.
