Kielbasa

Total Time: 2 hrs 15 mins Preparation Time: 45 mins Cook Time: 1 hr 30 mins

Ingredients

  • 1 lb lamb butt
  • 2 tablespoons milk
  • 1 tablespoon cornstarch
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon sugar
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dried parsley
  • 1/8 teaspoon whole grain mustard

Recipe

  • 1 course grind on the lamb.
  • 2 combine all ingredients & mix well.
  • 3 stuff into large hog casings & let set for 24 hours minimum.
  • 4 smoke for around 90 minutes or until internal temp of 155°f.
