Ingredients
- 1 lb lamb butt
- 2 tablespoons milk
- 1 tablespoon cornstarch
- 3/4 teaspoon kosher salt
- 1/2 teaspoon sugar
- 1/4 teaspoon black pepper
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon dried parsley
- 1/8 teaspoon whole grain mustard
Recipe
- 1 course grind on the lamb.
- 2 combine all ingredients & mix well.
- 3 stuff into large hog casings & let set for 24 hours minimum.
- 4 smoke for around 90 minutes or until internal temp of 155°f.
