Kidney Bean Brownies

Ingredients
- Servings: 12
- 1 cup cooked kidney bean, pureed
- 1 1/2 cups granulated sugar
- 3/4 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon salt
- 1/2 cup canola oil (can sub unsweetened applesauce)
- 4 eggs (or equivalent egg whites)
- 1 teaspoon vanilla
- 1/2 cup chopped walnuts (optional)
Recipe
- 1 spray bottom only of 13x9 inch baking dish with non-stick cooking spray.
- 2 in mixing bowl, combine all ingredients except nuts.
- 3 beat on low speed or by hand, scraping down sides of bowl, until smooth. stir in walnuts.
- 4 bake in 350-degree oven for 25 minutes or until tester inserted in center comes out clean.
- 5 cool in pan on wire rack. cut into squares.
