Kidney Bean (rajma) Delight

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 2
  • 1 cup kidney bean, boiled (rajma)
  • 1 large onion, chopped
  • nacho chip, as required
  • 4 tomatoes, boiled and ground to paste
  • 1 medium bell pepper, sliced
  • salt
  • black pepper
  • 1/2 teaspoon red chili powder
  • 1 tablespoon oil
  • 1 tablespoon margarine
  • 2 tablespoons tomato sauce
  • 1 tablespoon tabasco sauce
  • 2 tablespoons chili-garlic sauce
  • 1 tablespoon taco seasoning mix
  • 1 small white onion, sliced
  • 1 medium bell pepper, sliced
  • iceberg lettuce, chopped
  • 100 g black olives
  • 1 teaspoon jalapeno pepper
  • 1 cup cheddar cheese, shredded

Recipe

  • 1 heat oil and margarine in a pan.
  • 2 fold in the chopped onion and stir-fry for 2 minutes.
  • 3 add tomato paste and bell pepper. stir-fry for 2 more minutes.
  • 4 fold in the cooked rajma and all the sauces alongwith salt, pepper and chilli powder.
  • 5 allow it to cook on medium heat till the mixture thickens.
  • 6 then let it cool for a while(10-15 minutes).
  • 7 now take a flat plate and arrange nacho chips all over it.
  • 8 pour the prepared mixture over the chips.
  • 9 add the topping ingredients over this one by one in layers.
  • 10 lastly, top off with cheese and microwave for about 2 minutes until the cheese melts.
  • 11 serve hot.
  • 12 enjoy!
