Kidney Bean (rajma) Delight

Ingredients

- 1 cup kidney bean, boiled (rajma)
- 1 large onion, chopped
- nacho chip, as required
- 4 tomatoes, boiled and ground to paste
- 1 medium bell pepper, sliced
- salt
- black pepper
- 1/2 teaspoon red chili powder
- 1 tablespoon oil
- 1 tablespoon margarine
- 2 tablespoons tomato sauce
- 1 tablespoon tabasco sauce
- 2 tablespoons chili-garlic sauce
- 1 tablespoon taco seasoning mix
- 1 small white onion, sliced
- 1 medium bell pepper, sliced
- iceberg lettuce, chopped
- 100 g black olives
- 1 teaspoon jalapeno pepper
- 1 cup cheddar cheese, shredded
Recipe
- 1 heat oil and margarine in a pan.
- 2 fold in the chopped onion and stir-fry for 2 minutes.
- 3 add tomato paste and bell pepper. stir-fry for 2 more minutes.
- 4 fold in the cooked rajma and all the sauces alongwith salt, pepper and chilli powder.
- 5 allow it to cook on medium heat till the mixture thickens.
- 6 then let it cool for a while(10-15 minutes).
- 7 now take a flat plate and arrange nacho chips all over it.
- 8 pour the prepared mixture over the chips.
- 9 add the topping ingredients over this one by one in layers.
- 10 lastly, top off with cheese and microwave for about 2 minutes until the cheese melts.
- 11 serve hot.
