Kidney Bean Salad

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • 1 (16 ounce) can kidney beans, rinsed and drained
  • 2 hard-cooked eggs, chopped
  • 1/2 cup sliced celery
  • 1 small onion, chopped
  • 1/4 cup mayonnaise
  • 1/4 cup dill pickle relish
  • 1/2 teaspoon pepper
  • 1/4 teaspoon salt
  • lettuce leaf (optional)

Recipe

  • 1 in a bowl combine all of the ingredients.
  • 2 stir until coated.
  • 3 refrigerate until ready to serve.
  • 4 serve in a lettuce-lined bowl, if desired.
