Lamb Stew

Total Time: 2 hrs 35 mins Preparation Time: 5 mins Cook Time: 2 hrs 30 mins

Ingredients

  • Servings: 6
  • 1/4 cup virgin olive oil
  • 2 medium onions
  • 1 tablespoon turmeric
  • 1 teaspoon white pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 3 lbs lamb
  • 4 cups vegetable stock
  • 3 tablespoons tomato paste
  • 1/8 cup chopped fresh parsley
  • 1/8 cup chopped fresh cilantro

Recipe

  • 1 in a large pot, heat olive oil over medium high till hot. do not let it smoke. saute until onion softens and starts to turn golden brown.
  • 2 meanwhile, in a small dish, mix together turmeric, pepper, salt, and garlic powder.
  • 3 add the lamb on top of the onions & sprinkle the seasoning mix evenly on top.
  • 4 brown meat on both sides, stirring to mix onions and seasoning.
  • 5 add vegetable stock and bring to a boil.
  • 6 simmer over low heat for 2 hours. you can skim off fat every so often as it boils.
  • 7 add tomato paste, parsley & cilantro. stir.
  • 8 simmer another 20-30 minutes.
  • 9 serve over rice.
