Lamb Stew

Total Time: 1 hr 40 mins Preparation Time: 10 mins Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 4
  • 2 lbs lamb, cut into cubes
  • 1 1/2 lbs raw mushrooms (porcini or shiitake, or any you have on hand)
  • extra virgin olive oil
  • kosher salt
  • 2 teaspoons red pepper flakes

Recipe

  • 1 drizzle oil liberally over lamb and whole mushrooms in casserole dish.
  • 2 sprinkle salt and red pepper flakes.
  • 3 bake covered at 325 for 1 1/2 hours.
