Kids Favorite Chicken Taco Stuffed Pies

Ingredients
- 3 cups bread flour, plus more for kneading
- 3 tablespoons sugar
- 1/2 cup milk
- 1 egg
- 1 teaspoon cumin
- 1/4 cup butter
- 1/2 cup simply potatoes traditional mashed potatoes
- 1 (1/4 ounce) package yeast
- 1 teaspoon salt
- 2 chicken breasts
- 3 tablespoons taco seasoning
- 1/4 cup green onion, diced
- 1/4 cup cilantro, diced
- 1 cup cheddar cheese, shredded
Recipe
- 1 in a large bowl combine flour, salt and yeast.
- 2 in a pan over medium heat combine milk, butter, sugar, potatoes and cumin. heat until sugar dissolves but do not boil. add to the flour and combine using a wooden spoon. if dough is sticky add more flour. place dough on a floured surface and knead for 3 minutes. place in an oiled bowl and put in a warm spot to rise for 1 hour.
- 3 in a pot add chicken and 6 cups of water over medium high heat. boil chicken for 20 minutes. remove from water and cut into cubes-reserve 1/4 cup water. in a bowl combine reserved warm water and taco seasoning; mix. add chicken, green onions, cilantro and cheese.
- 4 take a baseball sized piece of dough and roll it out. place 1/4 cup chicken mixture on one end and fold other side over to form a pie. repeat with remaining ingredients. place on a greased cookie sheet and let rest for 15 minutes. bake in a 350 degree oven for 20-25 minutes or until golden brown. serve immediately.
