Kidney Bean Salad

Ingredients

- 1 lb white kidney beans, rinsed and drained
- 1 small tomato
- 1/2 cucumber, cut in to small pieces with skin
- 1 teaspoon dried cilantro
- 2 tablespoons fresh cilantro, chopped
- 1 teaspoon parsley flakes
- 5 small green onions, sliced (green tops only)
- 1 pinch salt
- 1 pinch pepper
- 1 dash cayenne pepper
- 1 pinch crushed red pepper flakes
- 1 tablespoon extra virgin olive oil
- 2 tablespoons apple vinegar
Recipe
- 1 rinse kidney beans in cold water, and drain well. place in medium glass bowl. add remaining ingredients, and stir lightly.
