Ingredients

- 4 medium eggs
- 4 -6 ounces oatmeal, prepared (frumenty)
- 6 -8 sheets phyllo pastry
- 2 cups milk
- 1 -2 pinch mint (to taste)
- 3 -4 tablespoons olive oil
- 1 1/8 lbs onions (sliced)
- 1 -2 pinch pepper (to taste)
- 2 -3 pinches salt (to taste)
Recipe
- 1 fry the sliced onions in oil until they are golden.
- 2 boil the frumenty and heat the milk.
- 3 add the frumenty and milk mixture to the onions and set aside.
- 4 beat the eggs.
- 5 when the onion mixture has cooled, add the eggs and mint.
- 6 oil a baking pan and layer half the pastry sheets, brushing each layer with butter.
- 7 add the filling on top of the layered pastry.
- 8 place the remaining pastry on top, brushing each layer with butter.
- 9 bake in a moderate oven for 40-50 minutes.
