Kremmidopitta

Ingredients

  • Servings: 6
  • 4 medium eggs
  • 4 -6 ounces oatmeal, prepared (frumenty)
  • 6 -8 sheets phyllo pastry
  • 2 cups milk
  • 1 -2 pinch mint (to taste)
  • 3 -4 tablespoons olive oil
  • 1 1/8 lbs onions (sliced)
  • 1 -2 pinch pepper (to taste)
  • 2 -3 pinches salt (to taste)

Recipe

  • 1 fry the sliced onions in oil until they are golden.
  • 2 boil the frumenty and heat the milk.
  • 3 add the frumenty and milk mixture to the onions and set aside.
  • 4 beat the eggs.
  • 5 when the onion mixture has cooled, add the eggs and mint.
  • 6 oil a baking pan and layer half the pastry sheets, brushing each layer with butter.
  • 7 add the filling on top of the layered pastry.
  • 8 place the remaining pastry on top, brushing each layer with butter.
  • 9 bake in a moderate oven for 40-50 minutes.
