Kringla (scandinavian Coffee Cake)

Ingredients

- 4 eggs
- 1/2 cup sugar
- 1/2 cup butter, melted
- 1 cup raisins
- 1/2 cup citron, minced finely
- 2 cups sifted flour
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon ground cardamom
- 1/2 cup finely chopped nutmeats
Recipe
- 1 beat eggs and sugar until very light.
- 2 add butter, raisins and citron.
- 3 sift flour, baking powder, salt and cardomom together three times and add to first mixture.
- 4 blend thoroughly.
- 5 divide dough in half.
- 6 shape into rings.
- 7 place on a buttered cookie sheet.
- 8 brush the tops with beaten eggs and sprinkle with sugar and finely chopped nuts.
- 9 bake at 350f until a golden brown, about 30 minutes.
- 10 when cool, slice about 1 inch wide, as though slicing bread.
