Ingredients

- 1/2 lb bacon, diced
- 9 large white potatoes, grated
- 2 tablespoons flour
- 6 eggs, beaten
- 1/2 cup milk
- 1 (5 ounce) can evaporated milk
- 1 large white onion, grated
- 1 teaspoon salt

Recipe
- 1 fry bacon until medium crisp.
- 2 set aside, reserving drippings.
- 3 grate potatoes into a bowl.
- 4 put in a colander and let drain.
- 5 put potatoes back into a bowl.
- 6 add flour and eggs.
- 7 stir.
- 8 add milk, evaporated milk, grated onion and salt.
- 9 stir in bacon.
- 10 grease a rectangular baking pan with reserved bacon drippings.
- 11 pour potato mixture into pan.
- 12 bake at 350 degrees f.
- 13 for 1 to 1 1/2 hours, until toasty brown on top but not burned.
- 14 serve with sour cream.
