Kukuye Sabzi Herb Omelet

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 2 cups baby spinach, finely chopped
  • 1 1/2 cups green onions, finely chopped
  • 1/4 cup parsley, finely chopped
  • 1/8 cup coriander, finely chopped
  • 1 tablespoon dill, finely chopped
  • 1 teaspoon tarragon, dried
  • 1/2 teaspoon turmeric
  • 2 tablespoons garlic chives, finely chopped
  • 1 tablespoon flour
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 8 eggs
  • 1/4 cup butter

Recipe

  • 1 combine.
  • 2 greens into bowl.
  • 3 mix the flour with salt pepper and turmeric.
  • 4 toss well so evenly coated.
  • 5 beat eggs until frothy and pour over greens (i just dumped herbs into eggs ).
  • 6 heat butter in 9 inch round casserole dish.
  • 7 swirl to coat sides ( i just sprayed with pam )and pour in egg mixture bake at 325 for 45 minutes( i baked for 30 minutes because i dont care for browned eggs ).
  • 8 until set and lightly browned cut into wedges serve with yogurt and flat bread.
