Lasagna Roll-ups

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 8
  • 12 uncooked lasagna noodles
  • 1 lb lean ground beef
  • 1 large onion, chopped
  • 1 (14 ounce) jar spaghetti sauce
  • 1 (8 ounce) can mushroom stems and pieces, undrained
  • 1 (15 ounce) container ricotta cheese
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed to drain
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon garlic powder

Recipe

  • 1 heat oven to 350 and cook and drain noodles as directed on package.
  • 2 cook beef and onion in skillet over med-high heat about 6 minutes, stirring occasionally, until beef is brown; drain.
  • 3 stir in spaghetti sauce and mushrooms then heat to a boiling, stirring constantly.
  • 4 pour into ungreased 11 by 7 by 1 1/2 inch baking dish.
  • 5 mix ricotta cheese, spinach, mozz cheese, parmesan cheese, salt, pepper and garlic and spread 3 tablespoons of this cheese mixture over each noodle.
  • 6 roll up each noodle and cut crosswise in half.
  • 7 place cut side down on top of beef mixture.
  • 8 cover with foil and bake 30 minutes.
  • 9 serve with additional parmesan cheese and enjoy!
