Lasagna Roll-ups

Total Time: 1 hr 15 mins Preparation Time: 30 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 1 lb cooked lasagna noodle
  • 2 cups tomatoes
  • 2 cups spinach
  • 2 cups low-fat ricotta cheese
  • 1 cup mozzarella cheese
  • 1/2 cup parmesan cheese
  • 2 tablespoons chives
  • 1 tablespoon garlic
  • 1 tablespoon garlic salt
  • 1 tablespoon olive oil
  • marinara sauce (optional)

Recipe

  • 1 boil and rinse lasagna.
  • 2 mix ricotta cheese, mozzarella cheese, all garlic, chives and 1/4 cup of parmesan cheese.
  • 3 chop tomatoes.
  • 4 drain spinach.
  • 5 lay one noodle flat.
  • 6 spread cheese mixture down center (not too thick).
  • 7 alternate tomatoes and spinach down noodle.
  • 8 sprinkle with parmesan cheese.
  • 9 roll noodle up.
  • 10 brush with olive oil (optional).
  • 11 sprinkle with garlic (optional).
  • 12 repeat procedure until finished with all noodles.
  • 13 bake these on 400°f for about 30-40 minutes. may also serve with marinara sauce.
