Low Fat Curried Chicken Stroganoff

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • Servings: 3
  • 3 tablespoons olive oil
  • 2 boneless skinless chicken breasts, sliced thinly
  • 1 cup mixed mushrooms
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 1/2 cup wine
  • 1 tablespoon chicken stock paste
  • 2 tablespoons curry powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 1/4 cups fat free sour cream

Recipe

  • 1 heat olive oil over medium heat. add chicken and cook completely, allowing to brown just a bit. remove from pan and set aside.
  • 2 add onion and sautee until soft, then add mushrooms sautee until mostly cooked.
  • 3 add in wine, stock paste, curry and salt & pepper. simmer until slightly reduced, about 15 minutes.
  • 4 add back in cooked chicken and stir in sour cream. bring to a gentle simmer for 5 minutes.
  • 5 serve over rice or tossed with egg noodles.
