Low Fat Curried Chicken Stroganoff

Ingredients

- 3 tablespoons olive oil
- 2 boneless skinless chicken breasts, sliced thinly
- 1 cup mixed mushrooms
- 1 small onion, finely diced
- 2 garlic cloves, minced
- 1/2 cup wine
- 1 tablespoon chicken stock paste
- 2 tablespoons curry powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 1/4 cups fat free sour cream
Recipe
- 1 heat olive oil over medium heat. add chicken and cook completely, allowing to brown just a bit. remove from pan and set aside.
- 2 add onion and sautee until soft, then add mushrooms sautee until mostly cooked.
- 3 add in wine, stock paste, curry and salt & pepper. simmer until slightly reduced, about 15 minutes.
- 4 add back in cooked chicken and stir in sour cream. bring to a gentle simmer for 5 minutes.
- 5 serve over rice or tossed with egg noodles.
