Low Fat Fruit Muffins

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 12
  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 egg
  • 4 tablespoons vegetable oil
  • 1 cup mixed fruit
  • 2/3 cup buttermilk
  • 1/2 cup unsweetened fruit juice

Recipe

  • 1 sift together dry ingredients.
  • 2 beat wet ingredients together until blended.
  • 3 add to dry ingredients.
  • 4 stir just enough to moisten flour.
  • 5 fill greased muffin tins about 2/3 full.
  • 6 bake at 400f for 20 minutes, or until done.
