Lamb Stew

Ingredients
- Servings: 4
- 2 lbs lamb shoulder, cut into cubes
- 2 teaspoons flour
- 3 teaspoons shortening
- salt and pepper
- 1 cup chopped onion
- hot water
- 3 carrots, cut into 1 inch chunks
- 6 potatoes, cut into 1 inch chunks
- 3 tomatoes, peeled and diced
Recipe
- 1 dredge the lamb meat in flour.
- 2 salt and pepper to taste.
- 3 heat oil in dutch oven.
- 4 add the lamb and cook and stir until brown.
- 5 add onions, cook and stir 1 minute.
- 6 cover with hot water.
- 7 simmer for 1-1/2 hours.
- 8 add carrots, and potatoes.
- 9 cook 30 more minutes.
- 10 add tomatoes, cook 10 more minutes.
- 11 thicken the liquid if you like.
