Lasagna Cupcakes Carnita Style

Ingredients
- 36 wonton wrappers
- 1 1/2 cups salsa, divided
- 1 egg
- 1 tablespoon chopped fresh cilantro or 1 tablespoon parsley
- 1/4 teaspoon black pepper
- 1/2 cup ricotta cheese
- 2 1/2 cups grated sharp cheddar cheese, divided
- 2 cups cooked meat (mixture of beef, and or pulled lamb)
- chipotle hot sauce, to taste
- 1/2 cup roasted corn
- 1/4 cup black beans
- 1 ounce chopped roasted green chilies
- 1 teaspoon cumin
- 1 -2 teaspoon dried oregano
- 1 tablespoon fresh cilantro or 1 tablespoon parsley
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 10 canned jalapeno slices
- fresh cilantro
- guacamole
- salsa
- sour cream
Recipe
- 1 preheat oven to 350 degrees.
- 2 mix all the meat mixture and 1 cup salsa in a pot and simmer for 10 minutes.
- 3 mix cheese mixture reserving 1/2 cup grated cheese for topping.
- 4 spray a 12 cupcake pan with olive oil.
- 5 place 1 wonton wrapper into each cupcake holder.
- 6 divide the meat mixture and cheese mixture into three for equal layering.
- 7 place 1/3 of the meat mixture topping with the 1/3 of the cheese mixture.
- 8 top with the second layer of wonton wrappers pressing down to spread the filling below.
- 9 place second layer of meat the second layer of cheese on wonton wrapper.
- 10 proceed with third layering.
- 11 then top with the reserved 1/2 cup of salsa.
- 12 sprinkle the reserved cheese over the salsa.
- 13 top each cupcake with a jalapeno slice.
- 14 bake 20 minutes.
- 15 garnish with fresh cilantro and serve along side salsa, sour cream and or avocados.
