French Onion Omelet

Ingredients

- 1 tablespoon olive oil
- 2 cups coarsely chopped red onions
- 1/4 cup chopped shallot (optional)
- 2 teaspoons sugar
- 1/4 cup sliced green onion
- 2 teaspoons dijon mustard
- 1/2 teaspoon dried thyme, crushed
- 6 eggs
- 1/4 cup water
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup shredded swiss cheese (4 ounces)
Recipe
- 1 in a 10-inch ovenproof skillet heat oil over medium heat.
- 2 add red onion, shallots (if desired, and sugar. cook for 12 to 15 minutes or until tender and golden, stirring often.
- 3 remove 1/4 cup cooked onion mixture and set aside.
- 4 stir green onion, mustard, and thyme into skillet.
- 5 in a bowl beat together eggs, water, salt, and pepper.
- 6 stir in 1/3 cup of the cheese.
- 7 pour into skillet.
- 8 bake in a 375°f for 15 minutes or until set.
- 9 top with remaining cheese and reserved onion mixture.
- 10 cut into wedges.
- 11 makes 6 main-dish servings.
