- 3 cups yams, peeled and cubed
- 1 tablespoon fresh lemon juice
- 1 tablespoon italian parsley, freshly chopped
- salt
- fresh ground pepper
Recipe
- 1 preheat oven to 375°f
- 2 place the yams in a covered baking dish with just enough water to coat the bottom of the pan.
- 3 bake for 45-50 minutes or until tender.
- 4 sprinkle the lemon juice and parsley over yams. salt and pepper to taste.
- 5 serve.
