Low Fat Fruit And Ginger Cake

Total Time: 4 hrs Preparation Time: 2 hrs 30 mins Cook Time: 1 hr 30 mins

Ingredients

  • 2 ounces roughly chopped ready to eat apricots
  • 2 ounces sultanas
  • 2 ounces roughly chopped stoned prunes
  • 1/2 pint cooled brewed tea (without milk)
  • 8 ounces plain flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground ginger
  • 4 1/2 ounces muscovado sugar
  • 1 medium egg

Recipe

  • 1 put apricots,sultanas and prunes in a bowl.
  • 2 with brewed tea.
  • 3 leave to soak for 2 hours.
  • 4 heat oven gas 4.
  • 5 lightly grease and line a 2 lb loaf tin.
  • 6 put flour,baking powder,ginger,sugar, and egg in a food blender.
  • 7 blend for 2mins.
  • 8 add fruit and blend to mix.
  • 9 turn into tin and level with knife.
  • 10 bake for 11/4 hours.
  • 11 cool before serving.
