Low Fat Fruit And Ginger Cake

Ingredients
- 2 ounces roughly chopped ready to eat apricots
- 2 ounces sultanas
- 2 ounces roughly chopped stoned prunes
- 1/2 pint cooled brewed tea (without milk)
- 8 ounces plain flour
- 2 teaspoons baking powder
- 1 teaspoon ground ginger
- 4 1/2 ounces muscovado sugar
- 1 medium egg
Recipe
- 1 put apricots,sultanas and prunes in a bowl.
- 2 with brewed tea.
- 3 leave to soak for 2 hours.
- 4 heat oven gas 4.
- 5 lightly grease and line a 2 lb loaf tin.
- 6 put flour,baking powder,ginger,sugar, and egg in a food blender.
- 7 blend for 2mins.
- 8 add fruit and blend to mix.
- 9 turn into tin and level with knife.
- 10 bake for 11/4 hours.
- 11 cool before serving.
