Lauren's Strawberry Pie

Total Time: 55 mins Preparation Time: 25 mins Cook Time: 30 mins

Ingredients

  • 1 prepared 9-inch pie crust, baked
  • 2 pints strawberries, divided
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 pinch salt
  • 1/2 cup water
  • 1/4 teaspoon red food coloring
  • 2 tablespoons lemon juice
  • 1 pint whipping cream
  • 8 ounces cream cheese
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla
  • 1 pinch salt

Recipe

  • 1 prepare and bake pie shell, cool.
  • 2 topping.
  • 3 wash and halve strawberries.
  • 4 whisk together the sugar, cornstarch and salt in a large saucepan.
  • 5 add the water and stir over medium heat until sugar dissolves.
  • 6 add half the strawberries, stir over medium high heat until thick.
  • 7 remove from heat, stir in lemon juice, food coloring and remaining strawberry halves.
  • 8 cool completely before putting on top of cream filling in pie shell.
  • 9 cream filling.
  • 10 while strawberry filling cools, whip the whipping cream.
  • 11 in separate bowl, beat together the cream cheese, powdered sugar, vanilla and salt.
  • 12 fold in the whipped cream. spread in the bottom of the cooled pie shell.
  • 13 once the strawberry filling has cooled, gently put it on top of the cream filling.
  • 14 serve cold.
