Surprise Raspberry Jam

Ingredients
- 5 cups chopped peeled fresh tomatoes
- 4 cups sugar
- 1 tablespoon lemon juice
- 2 (3 ounce) packages raspberry gelatin powder
Recipe
- 1 in a large saucepan, combine the tomatoes, sugar and lemon juice.
- 2 cook and stir over high heat until mixture comes to a boil.
- 3 reduce heat; simmer, uncovered for 25 minutes.
- 4 remove from the heat.
- 5 skim off foam if necessary.
- 6 stir in gelatin until completely dissolved.
- 7 pour into sterilized jars; and seal.
- 8 i usually process in boiling water bath for 5 minutes.
- 9 or refrigerate for up to 3 weeks without processing.
