Sweet & Sour Spare Ribs

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • 320 g spareribs
  • 7 tablespoons vegetable oil
  • 1/2 tablespoon sugar
  • 1 1/4 tablespoons sour plum sauce
  • 3/4 tablespoon preserved soya bean paste
  • 1 teaspoon cornflour
  • 2 fresh small-sized red chilies
  • 6 shallots
  • 1 1/2 slices gingerroot
  • 4 garlic cloves
  • rice

Recipe

  • 1 rinse spare ribs with running water.
  • 2 cut spare ribs into 6 cm pieces.
  • 3 add garlic, ginger and shallots into a mortar.
  • 4 use the pestle to pound the mixture.
  • 5 add the vegetable oil into the pan.
  • 6 heat oil before cooking the spare ribs.
  • 7 put in the pounded mixture and stir until fragrant.
  • 8 add in the preserved soya bean paste and spare ribs.
  • 9 stir for one minute.
  • 10 put in 1 1/2 rice bowls of water, chili, light soya sauce, sour plum sauce and sugar.
  • 11 simmer until spare ribs are tender cooked.
  • 12 dissolve the cornflour in 1 1/2 tablespoons of water.
  • 13 add in the diluted cornflour to the pan.
  • 14 when the gravy starts to thicken, remove from heat.
  • 15 serve the sweet & sour spare ribs while hot with plain steamed rice.
