Sweet & Sour Spare Ribs

Ingredients
- 320 g spareribs
- 7 tablespoons vegetable oil
- 1/2 tablespoon sugar
- 1 1/4 tablespoons sour plum sauce
- 3/4 tablespoon preserved soya bean paste
- 1 teaspoon cornflour
- 2 fresh small-sized red chilies
- 6 shallots
- 1 1/2 slices gingerroot
- 4 garlic cloves

Recipe
- 1 rinse spare ribs with running water.
- 2 cut spare ribs into 6 cm pieces.
- 3 add garlic, ginger and shallots into a mortar.
- 4 use the pestle to pound the mixture.
- 5 add the vegetable oil into the pan.
- 6 heat oil before cooking the spare ribs.
- 7 put in the pounded mixture and stir until fragrant.
- 8 add in the preserved soya bean paste and spare ribs.
- 9 stir for one minute.
- 10 put in 1 1/2 rice bowls of water, chili, light soya sauce, sour plum sauce and sugar.
- 11 simmer until spare ribs are tender cooked.
- 12 dissolve the cornflour in 1 1/2 tablespoons of water.
- 13 add in the diluted cornflour to the pan.
- 14 when the gravy starts to thicken, remove from heat.
- 15 serve the sweet & sour spare ribs while hot with plain steamed rice.
