Low Fat Tropical Chicken

Ingredients

- 6 boneless skinless chicken breasts
- 1 1/2 cups long grain rice (i use jasmine)
- 4 garlic cloves
- 1 cup fat free chicken broth
- 1 cup orange juice
- 2 teaspoons ground ginger
- 2 tablespoons ketchup
- 2 tablespoons honey
- 2 tablespoons rice vinegar
- 1 tablespoon light soy sauce
- 1 (20 ounce) can canned pineapple chunks, drained and reserved 1 cup (about 2 1/2 cups)
- scallion (to garnish)
Recipe
- 1 in a deep skillet or pan, sprayed with vegetable spray, brown the breasts 3 minutes each side.
- 2 set aside on a plate.
- 3 add rice and garlic to the pan and cook till rice is translucent.
- 4 place the chicken over the rice and add the remainder of the ingredients, including juice.
- 5 bring this to a boil and then turn to low.
- 6 simmer, covered till the rice is cooked about 20-30 minutes.
- 7 sprinkle with scallions and serve.
