Low-carb, High-protein Lemon Souffle

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 2
  • 1 egg, separated
  • 1/2 cup low fat cottage cheese
  • 2 (1 g) packets splenda sugar substitute
  • 1/4 teaspoon cream of tartar
  • 2 tablespoons lemon juice (to taste)
  • 1 teaspoon lemon zest, grated (to taste)

Recipe

  • 1 beat egg with cream of tartar until stiff but not dry.
  • 2 in a food processor combine the remaining ingredients.
  • 3 fold egg into cottage cheese mixture.
  • 4 spoon mixture into 2 small (about 5" diameter) ungreased ramekins.
  • 5 bake at 300 for about 30 minutes, or until knife inserted off-center comes out clean.
