Low-carb, High-protein Lemon Souffle

Ingredients

- 1 egg, separated
- 1/2 cup low fat cottage cheese
- 2 (1 g) packets splenda sugar substitute
- 1/4 teaspoon cream of tartar
- 2 tablespoons lemon juice (to taste)
- 1 teaspoon lemon zest, grated (to taste)
Recipe
- 1 beat egg with cream of tartar until stiff but not dry.
- 2 in a food processor combine the remaining ingredients.
- 3 fold egg into cottage cheese mixture.
- 4 spoon mixture into 2 small (about 5" diameter) ungreased ramekins.
- 5 bake at 300 for about 30 minutes, or until knife inserted off-center comes out clean.
