Perfect Pineapple Pie

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • 6 eggs (separated)
  • 2 cups granulated sugar
  • 4 tablespoons flour
  • 1/2 cup margarine
  • 2 cups milk
  • 1 teaspoon vanilla
  • 1 cup crushed pineapple (well drained)
  • 1/3 cup granulated sugar
  • 2 pre-baked pie crusts

Recipe

  • 1 all ingredients should be room temperature (very important!).
  • 2 cream together margarine and 2 cups of sugar.
  • 3 add egg yolks, milk, vanilla and flour.
  • 4 cover and cook in oven at 350, stirring several times, until thick.
  • 5 stir in well-drained pineapple.
  • 6 divide mixture evenly into two pre-baked pie shells.
  • 7 beat egg whites, gradually adding remaining sugar, until stiff peaks form.
  • 8 spread meringe on each pie and brown lightly in oven.
