Yogurt Bran Muffins

Total Time: 55 mins Preparation Time: 30 mins Cook Time: 25 mins

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1 1/4 cups natural bran
  • 3/4 cup brown sugar, packed
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 egg
  • 1 cup plain yogurt
  • 1/4 cup vegetable oil
  • 1 1/2 teaspoons vanilla extract
  • 1 cup dried apricots or 1 cup dates or 1 cup raisins, chopped

Recipe

  • 1 in a large bowl, whisk together flour, bran, sugar, baking powder, baking soda, cinnamon, and salt.
  • 2 in separate bowl, beat egg, blend in yogurt, oil and vanilla. pour over dry ingredients. sprinkle with all but 2 tablespoons of the apricots, stir just until dry ingredients are moistened.
  • 3 spoon into greased or paper-lined muffin cups, filling three-quarters full. press remaining apricots into tops.
  • 4 bake in center of 375*f oven until tops are firm to the touch, 20-25 minutes. let cool in pan on rack for 15 minutes, transfer to rack and let cool.
