Low Fat Healthy Pumpkin Muffins

Ingredients
- 1 1/2 cups sugar
- 2 tablespoons canola oil
- 3/4 cup applesauce
- 2 eggs
- 1 egg
- 1 1/2 cups pumpkin
- 1/2 cup water
- 3 cups whole wheat flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/2 teaspoon ground cloves
- 1 teaspoon nutmeg
- 1 teaspoon cinnamon
- raisins and nuts (walnut, pecans) (optional)
- 1/4 cup brown sugar (topping)
Recipe
- 1 mix together sugar, oil, applesauce, eggs, pumpkin, and water.
- 2 in a separate bowl mix flour, baking powder, baking soda, and spices.
- 3 using a mixer add the dry ingredients to the first mixture.
- 4 add raisins and nuts if desired.
- 5 let stand 45-60 min at room temperature.
- 6 place into greased muffing tins.
- 7 sprinkle brown sugar onto each muffin.
- 8 bake in preheated oven at 400 degrees f for 12-15 minutes.
