Low Fat Healthy Pumpkin Muffins

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • 1 1/2 cups sugar
  • 2 tablespoons canola oil
  • 3/4 cup applesauce
  • 2 eggs
  • 1 egg
  • 1 1/2 cups pumpkin
  • 1/2 cup water
  • 3 cups whole wheat flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon ground cloves
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • raisins and nuts (walnut, pecans) (optional)
  • 1/4 cup brown sugar (topping)

Recipe

  • 1 mix together sugar, oil, applesauce, eggs, pumpkin, and water.
  • 2 in a separate bowl mix flour, baking powder, baking soda, and spices.
  • 3 using a mixer add the dry ingredients to the first mixture.
  • 4 add raisins and nuts if desired.
  • 5 let stand 45-60 min at room temperature.
  • 6 place into greased muffing tins.
  • 7 sprinkle brown sugar onto each muffin.
  • 8 bake in preheated oven at 400 degrees f for 12-15 minutes.
