Low Fat Lemon Blueberry Muffin

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • 1 3/4 cups flour
  • 1/2 cup whole wheat flour
  • 3/4 cup brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 cup buttermilk
  • 1 1/4 cups unsweetened applesauce or 1 1/4 cups pumpkin puree
  • 1 egg
  • 1 teaspoon oil
  • 1 teaspoon lemon extract
  • 1 tablespoon lemon zest
  • 1 1/2 cups fresh blueberries

Recipe

  • 1 mix dry, mix wet. add wet to dry til moistened. fold in berries.
  • 2 scoop into muffin pan.
  • 3 bake at 400 for 25 minutes.
