Low Fat Lemon Blueberry Muffin

Ingredients
- 1 3/4 cups flour
- 1/2 cup whole wheat flour
- 3/4 cup brown sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 cup buttermilk
- 1 1/4 cups unsweetened applesauce or 1 1/4 cups pumpkin puree
- 1 egg
- 1 teaspoon oil
- 1 teaspoon lemon extract
- 1 tablespoon lemon zest
- 1 1/2 cups fresh blueberries
Recipe
- 1 mix dry, mix wet. add wet to dry til moistened. fold in berries.
- 2 scoop into muffin pan.
- 3 bake at 400 for 25 minutes.
