Low Fat Mayonnaise

Ingredients
- 2 cups cold water
- 2 tablespoons cornstarch
- 1/4 cup olive oil
- 1/4 cup vinegar
- 1/4 cup plain low-fat yogurt
- 2 teaspoons yellow mustard
- 1 teaspoon horseradish
Recipe
- 1 whisk together water and cornstarch in a small saucepan.
- 2 stir continously over a medium heat until the mixture comes to a boil.
- 3 continue stirring and boiling for 1-2 minutes or until the mixture is clear.
- 4 pour mixture into a bowl and whisk the remaining ingredients, in order listed.
- 5 whisk.
- 6 refrigerate in a tightly sealed container.
- 7 should keep about 2 weeks.
