Low Fat Mayonnaise

Total Time: 10 mins Preparation Time: 5 mins Cook Time: 5 mins

Ingredients

  • 2 cups cold water
  • 2 tablespoons cornstarch
  • 1/4 cup olive oil
  • 1/4 cup vinegar
  • 1/4 cup plain low-fat yogurt
  • 2 teaspoons yellow mustard
  • 1 teaspoon horseradish

Recipe

  • 1 whisk together water and cornstarch in a small saucepan.
  • 2 stir continously over a medium heat until the mixture comes to a boil.
  • 3 continue stirring and boiling for 1-2 minutes or until the mixture is clear.
  • 4 pour mixture into a bowl and whisk the remaining ingredients, in order listed.
  • 5 whisk.
  • 6 refrigerate in a tightly sealed container.
  • 7 should keep about 2 weeks.
