Low Fat Mini Cheesecake Cupcakes

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 12
  • 12 medium foil liners
  • 12 vanilla wafers (nilla reduced-fat preferred)
  • 2 (8 ounce) packages fat free cream cheese
  • 2 eggs
  • 1 teaspoon lemon juice
  • 3/4 cup sugar
  • 1 teaspoon vanilla
  • 10 ounces frozen sliced strawberries in syrup, thawed

Recipe

  • 1 beat the cream cheese, eggs, lemon juice, vanilla and sugar until creamy.
  • 2 place a wafer in each cup and fill 3/4 full with mixture.
  • 3 bake 325f for 25 minutes.
  • 4 cool and refrigerate.
  • 5 when ready to serve place some strawberries on top with a little syrup.
