Low Fat Noodle Kugel

Ingredients

  • Servings: 12
  • 1 (16 ounce) package wide egg noodles
  • 1 cup reduced fat margarine
  • 1/2 cup fat free sour cream
  • 1 1/2 cups egg substitute
  • 2 cups sugar
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract
  • 8 ounces jars applesauce
  • 1/4 cup raisins
  • 1/4 cup graham cracker crumbs (optional)
  • 1 teaspoon ground cinnamon, to taste

Recipe

  • 1 preheat oven to 350 degrees f (175 degrees c).
  • 2 coat a 9x13 baking dish with cooking spray.
  • 3 bring a large pot of lightly salted water to a boil.
  • 4 add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • 5 mix together margarine, sour cream, egg substitute, sugar, lemon juice, vanilla extract, and applesauce.
  • 6 stir in noodles and raisins.
  • 7 spread graham cracker crumbs on bottom of prepared pan.
  • 8 pour noodle mixture over crumbs.
  • 9 sprinkle top with cinnamon.
  • 10 bake at 350 degrees f (175 degrees c) for 45 to 60 minutes, or until set.
  • 11 cover with foil if it browns too quickly.
