Low Fat Noodle Kugel

Ingredients

- 1 (16 ounce) package wide egg noodles
- 1 cup reduced fat margarine
- 1/2 cup fat free sour cream
- 1 1/2 cups egg substitute
- 2 cups sugar
- 1 teaspoon lemon juice
- 1 teaspoon vanilla extract
- 8 ounces jars applesauce
- 1/4 cup raisins
- 1/4 cup graham cracker crumbs (optional)
- 1 teaspoon ground cinnamon, to taste
Recipe
- 1 preheat oven to 350 degrees f (175 degrees c).
- 2 coat a 9x13 baking dish with cooking spray.
- 3 bring a large pot of lightly salted water to a boil.
- 4 add pasta and cook for 8 to 10 minutes or until al dente; drain.
- 5 mix together margarine, sour cream, egg substitute, sugar, lemon juice, vanilla extract, and applesauce.
- 6 stir in noodles and raisins.
- 7 spread graham cracker crumbs on bottom of prepared pan.
- 8 pour noodle mixture over crumbs.
- 9 sprinkle top with cinnamon.
- 10 bake at 350 degrees f (175 degrees c) for 45 to 60 minutes, or until set.
- 11 cover with foil if it browns too quickly.
