Low Fat Pumpkin Recipe

Total Time: 21 mins Preparation Time: 1 min Cook Time: 20 mins

Ingredients

  • 2 cups canned pumpkin
  • 1 1/4 cups sugar
  • 1 cup applesauce
  • 2/3 cup water
  • 2 eggs
  • 2 cups whole wheat flour
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons nutmeg
  • 1/2 teaspoon ginger
  • 1 1/2 teaspoons cinnamon

Recipe

  • 1 in a large bowl, blend pumpkin, sugar, applesauce, water, eggs and egg whites.
  • 2 add flours, baking soda, nutmeg, ginger and cinnamon.
  • 3 blend at low speed until moistened, then beat 1 minute at medium speed.
  • 4 pour batter into 2 non-stick sprayed and floured (bottom only) loaf pans 9x5 inches.
  • 5 bake until inserted toothpick comes out clean.
  • 6 cool completely on wire rack.
