Low Fat Pumpkin Recipe

Ingredients
- 2 cups canned pumpkin
- 1 1/4 cups sugar
- 1 cup applesauce
- 2/3 cup water
- 2 eggs
- 2 cups whole wheat flour
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking soda
- 1 1/2 teaspoons nutmeg
- 1/2 teaspoon ginger
- 1 1/2 teaspoons cinnamon
Recipe
- 1 in a large bowl, blend pumpkin, sugar, applesauce, water, eggs and egg whites.
- 2 add flours, baking soda, nutmeg, ginger and cinnamon.
- 3 blend at low speed until moistened, then beat 1 minute at medium speed.
- 4 pour batter into 2 non-stick sprayed and floured (bottom only) loaf pans 9x5 inches.
- 5 bake until inserted toothpick comes out clean.
- 6 cool completely on wire rack.
