Low Fat Red Beans And Rice

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 1 1/2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 1 garlic clove, minced
  • 1 ounce canadian bacon, minced
  • 1 (15 ounce) can red kidney beans, rinsed and drained
  • 3 cups cooked rice
  • salt and pepper

Recipe

  • 1 heat oil in a large nonstick skillet over med heat.
  • 2 add the onions, garlic, and bacon.
  • 3 cook, stirring often, for 6 minutes, or until lightly browned.
  • 4 stir in the beans and rice.
  • 5 cook for 10 minutes, or until the rice is lightly browned.
  • 6 season with salt and pepper.
