Low Fat Refried Beans

Ingredients
- Servings: 4
- 1 cup pinto beans
- 1 tablespoon extra virgin olive oil
- 3 garlic cloves
- 1 onion
- salt & pepper
Recipe
- 1 put the pintos in a pan with water to cover.
- 2 bring to a boil, let boil 3 minutes.
- 3 turn off the heat and let stand forat least 45 minutes.
- 4 drain and refill pan with water to cover.
- 5 boil 30 minutes or till tender.
- 6 meanwhile, chop onions and garlic (i use a food processor, so it's really fast).
- 7 saute onions and garlic in olive oil.
- 8 put pintos and onions and garlic into food processor to mash.
