Low Fat Refried Beans

Total Time: 1 hr 35 mins Preparation Time: 20 mins Cook Time: 1 hr 15 mins

Ingredients

  • Servings: 4
  • 1 cup pinto beans
  • 1 tablespoon extra virgin olive oil
  • 3 garlic cloves
  • 1 onion
  • salt & pepper

Recipe

  • 1 put the pintos in a pan with water to cover.
  • 2 bring to a boil, let boil 3 minutes.
  • 3 turn off the heat and let stand forat least 45 minutes.
  • 4 drain and refill pan with water to cover.
  • 5 boil 30 minutes or till tender.
  • 6 meanwhile, chop onions and garlic (i use a food processor, so it's really fast).
  • 7 saute onions and garlic in olive oil.
  • 8 put pintos and onions and garlic into food processor to mash.
