Low Calorie Lemon Berry Scone

Ingredients
- 2 cups flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/4 cup splenda granular, sugar substitute
- 1/2 cup light butter
- 1/2 teaspoon lemon extract
- 1/4 cup egg substitute
- 1/2 cup 1% low-fat milk
- 1 cup fresh strawberries (whole) or 1 cup blueberries (whole)
Recipe
- 1 heat oven to 375°f.
- 2 mix the 2 cups flour, 4 teaspoons baking powder, 1 teaspoon salt and, 1/4 cup splenda in a mixing bowl.
- 3 add lemon substitute.
- 4 add egg and milk and work it into the other ingredients gently yet at a speedy pace with hands.
- 5 add berries and gently fold.
- 6 pat or roll dough to desired shape (7-10 pieces).
- 7 brush with milk and sprinkle with splenda if desired.
- 8 bake 10-18 minutes or until lightly brown.
- 9 do not over bake!
