Low Carb Awesome Enchiladas - L-c-f

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 lb ground beef (1 to 2 lbs)
  • 1 (14 ounce) can enchilada sauce or 1 (1 1/4 ounce) package dry enchilada mix
  • 1 green onion, chopped
  • 1 cup shredded cheddar cheese
  • 4 eggs
  • 1/4 cup heavy cream
  • 1 teaspoon butter

Recipe

  • 1 start the beef browning over medium heat.
  • 2 break eggs into mixing bowl and add cream.
  • 3 beat on high speed till well blended and all yellow.
  • 4 heat up crepe pan or small skillet and add some of the butter.
  • 5 you will need to re-butter the pan several times.
  • 6 pour just enough egg mixture over the pan to coat.
  • 7 allow to cook through, you may turn it, but don't have to.
  • 8 this will make approx 6 small crepes.
  • 9 ***if using dry enchilada mix, prepare as per pkg direction.
  • 10 drain ground beef and add a small amount of sauce.
  • 11 place a crepe inside a baking dish and coat with small amount of sauce.
  • 12 add beef and roll.
  • 13 when all are rolled add remaining beef and sauce.
  • 14 sprinkle chopped green peppers and cheese.
  • 15 bake 350ºf for 10-15 min or until cheese is melted and a little bubbly.
  • 16 serve with favorite fixings: sour cream, lettuce, olives, guacamole, etc.
  • 17 carbs: 6g carbs total.
