Shallots And Mushrooms With Tarragon

Ingredients

- 1/2 lb dry shallot, peeled
- 1 tablespoon butter
- 1/2 lb fresh mushrooms, cleaned and halved
- 1 tablespoon lemon rind, chopped
- 1 teaspoon tarragon
- 1/2 teaspoon saffron
- salt and black pepper (to taste)
Recipe
- 1 cook shallots in a pan for 10 minutes in salted boiling water.
- 2 remove from pan and drain well.
- 3 heat butter in saucepan over medium heat.
- 4 add shallots and remaining ingredients.
- 5 season with salt and pepper.
- 6 cover and cook over low heat for 6 to 7 minutes.
- 7 serve.
