Shallots And Mushrooms With Tarragon

Total Time: 50 mins Preparation Time: 30 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1/2 lb dry shallot, peeled
  • 1 tablespoon butter
  • 1/2 lb fresh mushrooms, cleaned and halved
  • 1 tablespoon lemon rind, chopped
  • 1 teaspoon tarragon
  • 1/2 teaspoon saffron
  • salt and black pepper (to taste)

Recipe

  • 1 cook shallots in a pan for 10 minutes in salted boiling water.
  • 2 remove from pan and drain well.
  • 3 heat butter in saucepan over medium heat.
  • 4 add shallots and remaining ingredients.
  • 5 season with salt and pepper.
  • 6 cover and cook over low heat for 6 to 7 minutes.
  • 7 serve.
