Ingredients

- 1 lb dried cannellini beans
- 3 garlic cloves
- 1 onion, quartered
- 2 bay leaves
- 1/3 cup olive oil
- 2 tablespoons fresh lemon juice
- 1/2 cup chopped flat leaf parsley
- salt and pepper, to taste
Recipe
- 1 soak beans overnight in cold water to cover.
- 2 drain; place in dutch oven with garlic, onion, bay leaves and water to cover by 2 inches.
- 3 bring to a boil; reduce heat.
- 4 simmer covered 30-45 minutes, or until tender.
- 5 drain; discard garlic, onion and bay leaves.
- 6 toss with olive oil, lemon juice, parsley, salt and pepper.
