Tuscan Beans

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • Servings: 8
  • 1 lb dried cannellini beans
  • 3 garlic cloves
  • 1 onion, quartered
  • 2 bay leaves
  • 1/3 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 1/2 cup chopped flat leaf parsley
  • salt and pepper, to taste

Recipe

  • 1 soak beans overnight in cold water to cover.
  • 2 drain; place in dutch oven with garlic, onion, bay leaves and water to cover by 2 inches.
  • 3 bring to a boil; reduce heat.
  • 4 simmer covered 30-45 minutes, or until tender.
  • 5 drain; discard garlic, onion and bay leaves.
  • 6 toss with olive oil, lemon juice, parsley, salt and pepper.
