Stephanie's Broccoli Casserole

Ingredients



  • Servings: 9

  • 16 ounces frozen chopped broccoli

  • 1 (12 ounce) can cream of mushroom soup

  • 1 (8 ounce) package shredded cheddar cheese

  • 1/2 cup butter

  • 20 saltine crackers


Recipe



  • 1 steam the broccoli. dump the soup out and put half a can of water in with it and your cheese. microwave that until the cheese is melted. melt butter in a separate bowl, crumble crackers and mix in with butter. when broccoli is done, dump it in a casserole dish, put the cheese mixture on top of that and then put the crackers on top of that. bake in 350 degree oven for 30 minutes or until it's brown.

Saskatoon Pie Filling

Ingredients

  • 4 cups water
  • 1/2 cup lemon juice
  • 12 cups fresh saskatoon berries
  • 3 cups sugar
  • 1 cup cornstarch

Recipe

  • 1 boil together the water and lemon juice.
  • 2 add the saskatoons, and bring to a boil again.
  • 3 mix the sugar with the cornstarch thoroughly.
  • 4 add the sugar/cornstarch mixture to the saskatoons.
  • 5 stir and cook until juice is thickened and clear.
  • 6 pour in sterilized quart or pint jars.
  • 7 seal.
  • 8 process in hot water bath for 20 minutes for quarts or 15 minutes for pints.

Tomato, Cucumber, And Red Pepper Relish

Ingredients



  • 1 red pepper, seeded and finely diced

  • 1 english cucumber, seeded and finely diced

  • 2 large tomatoes, seeded and finely diced

  • 1 -2 sweet banana pepper, finely diced

  • 2 tablespoons olive oil

  • 2 tablespoons balsamic vinegar

  • 1 teaspoon dried oregano

  • salt & freshly ground black pepper

  • parsley (optional)


Recipe



  • 1 in a large bowl toss together the red pepper, cucumber, tomato and sweet banana pepper.

  • 2 add the oil, vinegar, oregano, salt and pepper to taste, and toss to combine.

  • 3 chop parsley and sprinkle over salad. enjoy!

Louisiana Syrup Cake

Ingredients



  • Servings: 6

  • 2 1/2 cups all-purpose flour

  • 1 teaspoon ground cinnamon

  • 1 teaspoon ground ginger

  • 1/2 teaspoon ground cloves

  • 1/2 teaspoon salt

  • 1/2 cup vegetable oil

  • 1 1/2 cups steen's cane syrup

  • 1 egg

  • 1 1/2 teaspoons baking soda

  • 3/4 cup hot water

  • 1/4 cup butter, softened

  • 2 cups sifted powdered sugar

  • 1 teaspoon vanilla extract

  • 1/4 teaspoon salt

  • 2 tablespoons steen's cane syrup

  • 1 make the cake: preheat oven to 350°; grease and flour a 9-inch square or round cake pan.

  • 2 in a bowl, combine the flour, cinnamon, ginger, cloves, and salt; stir with a fork to mix well.

  • 3 in a big bowl, combine the vegetable oil, cane syrup, and egg; stir with a fork or whisk to combine well.

  • 4 add about 1/3 or the flour mixture to the syrup mixture and then stir gently, just until the flour disappears.

  • 5 add the baking soda to the hot water, and then stir about half the water into the batter.

  • 6 stir another 1/3 of the flour mixture, then the remaining water, and finally the remaining flour, stirring gently each time just to mix everything well.

  • 7 quickly pour the batter into the prepared pan, and bake for 30-35 minutes, until the cake springs back when touched gently in the center, and is beginning to pull away from the sides of the pan.

  • 8 make the frosting: in a bowl, beat the butter until light and fluffy; add in half the powdered sugar, the vanilla, and salt; beat with a mixer at medium speed until smooth.

  • 9 add the remaining powdered sugar and the cane syrup, and beat until smooth and creamy, stopping to scrape down the bowl and mix well.

  • 10 to complete: if cake is round, cool the cake in the pan on a rack, for 10 minutes, turn it out of the pan, and place it, top side up, on a wire rack to cool completely; place cooled cake on a serving plate or cake stand, top side down, and spread the frosting over it generously, covering the top and sides.

  • 11 if it is square, spread the icing over the cooled cake right in the pan, and cut into squares to serve; serve warm, right from the pan.

Swiss Cheese Balls

Ingredients



  • 1/4 cup butter

  • 2 tablespoons flour, plus additional flour for rolling balls

  • 1/2 cup hot milk

  • 1/2 lb swiss cheese, grated

  • salt and pepper

  • nutmeg

  • 2 egg yolks

  • oil (for deep frying)


Recipe



  • 1 preheat oven to 300 degrees.

  • 2 in a sauce over medium heat, melt the butter.

  • 3 stir in the 2 t flour.

  • 4 add milk and stir to mix well.

  • 5 add the swiss cheese and seasonings to taste.

  • 6 stir so all ingredients are well combined.

  • 7 add the egg yolks and remove from the heat.

  • 8 pour mixture in a 9x9" baking dish.

  • 9 bake in the preheated 300 degree oven for 10 minutes.

  • 10 remove the dish from the oven and refrigerate for 2 hours or until completely cooled.

  • 11 heat oil in a deep fryer.

  • 12 form balls and roll in the additional flour.

  • 13 deep fry the cheese balls, a few at a time, until golden brown.

  • 14 remove from hot oil and drain.

Southern Pecan Pie Filling

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • 2 egg yolks
  • 1 cup granulated sugar
  • 4 tablespoons flour
  • 1 cup sour cream
  • 1/4 teaspoon lemon juice or 1/4 teaspoon extract
  • 1/8 teaspoon salt
  • 2 egg whites
  • 1 cup brown sugar
  • 1 cup broken pecans

Recipe

  • 1 mix all ingredients and cook in double boiler for 45 minutes, stirring every 10 minutes for the first 20 minutes, then stirring every 3-5 minutes,or until thickened.
  • 2 while mixture cools, prepare topping.
  • 3 for topping: beat egg whites until stiff.
  • 4 add brown sugar and mix well.
  • 5 stir in pecans.
  • 6 pour cooled filling into baked pie shell.
  • 7 cover with topping and bake in 325 degree oven until light brown or about 15 minutes.

Mama's Kings Ranch Chicken Casserole (southeast Texas Style)

Ingredients



  • Servings: 4

  • 6 cups boiling water

  • 3 cups cooked chicken (shredded)

  • 4 cups cheese (mild shredded)

  • 1 -16 oz.bag nacho cheese flavor doritos (or any other flavor you like)

  • 1 -10 oz.can condensed cream of chicken soup

  • 1 -10 oz.can condensed cream of mushroom soup

  • 1 -8 oz.can rotel tomatoes & chilies (undrained. you can also choose between hot or mild)

  • 1 add enough water to pot to cover chicken completely. boil chicken until it is completely done( normally takes about 45 minutes).

  • 2 preheat oven to 350.

  • 3 in a large mixing bowl combine the cream of chicken, cream of mushroom, rotel tomatoes and 1/2 to 3/4 a can of water. mix well.

  • 4 in a 9x13 pan layer the ingredients starting with the doritos, then the shredded chicken, cheese, and soup mixture on top. repeat layering the ingredients in the same order until you get to the top of the pan or run out of ingredients.

  • 5 place pan in the oven and bake for 20 minutes.
