Low Fat Potato Salad

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 1 1/2 lbs small potatoes, unpeeled and cut into pieces
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons dijonnaise mustard (r)
  • 1 (6 ounce) carton plain low-fat yogurt, drained

Recipe

  • 1 cook potatoes in boiling water until tender.
  • 2 drain potatoes and allow to cool.
  • 3 in a large bowl, combine onion, dijonnaise, and yogurt.
  • 4 add cooled potatoes and mix well. serve warm or refrigerate until ready to serve.
